Resurrection Cookies

Resurrection Cookies On the Saturday before Easter, we make resurrection cookies (meringues). The best part is licking the spoon while we are putting these on our cookie sheets and then taping the oven shut (like sealing the tomb). When we open up the oven on Easter morning to pull them out and pop one in our mouths, the meringues have a hollow center and remind us that the tomb was empty. He is risen. He is risen indeed! And come on, it's such a treat to have a meringue for breakfast! Why not?! It's Easter and time to celebrate!
